It’s somehow fitting that Halo-Halo, that unlikely-but-ingenious mix of shaved ice, sweet beans, ice cream, jackfruit, and flan (among other things), is the unofficial national dessert of the Philippines. After all, the Philippines has long been a mixing ground of cultures, from Malay to Chinese, to Spanish to American.
